Falco Bakery - Langridge

Falco Bakery - Langridge is a small-batch bakery in Collingwood, Melbourne, focused on traditional baking techniques with a contemporary approach. Its offering centres on locally baked goods, made with organic flour and other locally sourced ingredients, including dairy from Schulz Organic Dairy and chocolate from Silver Street.

The bakery was established to bring this style of baking to the Collingwood area. Head baker and co-owner Christine Tran brings experience from Tartine in San Francisco, Tivoli Road Bakery and Loafer Bread in North Fitzroy. She works alongside Manu Potoi, Michael Bascetta and Casey Wall as part of The Made Well Group, which also includes Bar Liberty and Capitano.

Coffee is roasted nearby by Tim Varney of Stella Coffee in Collingwood, giving the bakery a locally connected approach from baking through to drinks. Falco also offers pre-ordering seven days a week, which may suit anyone planning a bakery pick-up rather than relying on an unplanned visit. With its focus on bread, baked goods, local produce and careful sourcing, it is a natural fit for solo coffee stops, takeaway pastries or a considered addition to a neighbourhood food run.
