There is real history behind the Carlton address. James Calexte Watson opened the premises in three Lygon Street houses in 1935 after moving his wine merchant business from Fitzroy. He helped introduce a wider audience to unfortified table wine, including through trips to north-east Victorian vineyards and selections bought for customers to taste and take home. In 1960, the site was redesigned as a dedicated wine bar and bistro. Architect Robin Boyd developed the accepted design after Roy Grounds, a regular customer, delegated the work, and the renovation was completed in 1963.

That history, together with the venue’s emphasis on atmosphere, makes Jimmy Watson’s a natural choice for diners who want more than a quick meal. It also caters for group occasions, with function and private dining enquiries available for birthdays, corporate dinners and catch-ups. Reservations are offered for intimate dinners, celebrations and relaxed meals with friends.
