Rustica Sourdough

Rustica Sourdough’s South Yarra flagship is a bakery, café and brunch destination on Chapel Street, with an open kitchen that lets you watch the bakers and pastry chefs at work. The 500-square-metre, light-filled space is designed for more than a quick coffee: you can sit down for brunch, pick up a pastry, or take home a loaf for later. The bakery’s sourdough is naturally leavened and cold-fermented for 36–48 hours, using what the business describes as Certified Sustainable flour. Alongside the bread, the South Yarra café serves handmade pastries, house-made sourdough-based breakfasts and specialty coffee. Its brunch menu includes chilli scrambled eggs, lobster benedict and croissant French toast, while the signature crullers are made fresh each morning at the South Yarra site. The website lists maple-glazed, salted caramel and lemon curd versions.

There is a clear craft focus behind the operation. Rustica was founded in 2012 by Brenton Lang, beginning as a small artisan bakery and café in Fitzroy before expanding to venues around Melbourne. The South Yarra location remains the flagship, while the wider business also operates cafés in Brighton, the CBD, Highpoint and Melbourne Airport, as well as a wholesale bakery in Footscray. That wholesale arm supplies breads, pastries and Grab & Go items to hospitality and retail businesses across metropolitan Melbourne and regional Victoria.

Rustica suits a range of visits without trying to be all things to everyone: a solo coffee and pastry, a relaxed brunch, or a stop to collect bread for the table.
