The business began during Melbourne’s 2020–21 lockdowns, when Sebastian started baking cinnamon scrolls at home as a personal project. He and his wife, Annabelle, had been cheffing together since 2017, and worked together to turn the scroll idea into a business as interest grew among friends, family and neighbours. Their first wholesale plan placed the scrolls in more than 50 cafes in the first year, with a further waitlist of venues.
The couple later shifted their focus from wholesale to serving customers directly, developing a takeaway window from their commercial kitchen operation in Caulfield South. The business says its team has since grown to more than 20 people and produces thousands of scrolls per week, per store. Its stated aim is to make products that bring people joy while creating a warm, welcoming space—an approach that suits the straightforward pleasure of dropping by for a fresh scroll and drink.
